A Rare Break at the Huntersville Farmer's Market

Experiencing all that Huntersville has to offer helps to make us better community partners. If we know all that is around us, we can convey the richness of our town to others. Each Saturday morning, the Huntersville Farmer’s Market brings area goods to our downtown. In my kitchen this morning, I’ve got gorgeous tomatoes, squash, zucchini, blackberries and homemade rosemary/olive oil wheat bread.  And, I spent around $12!

The Swain household will be savoring the summer tastes with our favorite tomato salad today.  I hope you too will enjoy…..

Summer Tomato Salad

1 pound very ripe vine-ripened tomatoes, diced, skin on

6 large garlic cloves, finely minced

1/4 cup finely minced fresh basil

3 tablespoons extra-virgin olive oil

salt and freshly ground pepper

red pepper flakes, as desired

Place the tomatoes in a large bowl and add the remaining ingredients. Mix well and set aside for 3 hours at room temperature.

Break up pieces of fresh bread (like the homemade rosemary and olive oil bread) and scoop up sauce. Or, immediately pour spoonfuls on freshly-made linguine or other pasta.

  1. Loved this page & it makes my mouth water! This is just another “feather in the cap” for the town of Huntersville! What lucky citizens to have all of this so close and so reasonable.
